Jalapeno Popper Inspired Grilled Cheese June 13, 2012

I do love jalapeno poppers, so this Pinterest recipe caught my eye.  I knew my husband would love it, too!  I’m a wuss when it comes to spice, so I was a bit nervous about the jalapenos, but the peppers turned out just right with just a little spice!  I cooked the sandwiches in the bacon grease and they were nice and crisp and tasty.  The apricot preserves added a pleasant sweet taste to the sandwich.  I will be making these again!

Substitutions:  I didn’t have goat cheese, so I spread a semi-thick layer of cream cheese and them sprinkled some mozzarella cheese on top in lieu of the goat cheese.

Time:  45 minutes

Eggplant and Goat-Cheese Sammies with Tomato Tarragon Sauce January 9, 2012

This recipe was great!  I loved the crispy texture of the fried eggplant!  It was a good idea to go with Panko breadcrumbs.  Also, I loved loved loved the sweet sauce.  I will make the sauce again for spaghetti or another Italian dishes.

 

Time:  It took me 45 minutes from pulling out the ingredients to sitting down at the table.  I did most of the clean up while I cooked, too!

Substitutions:  I was excited to try goat cheese, but I couldn’t find it at my grocery store (I didn’t know exactly what to look for), so I substituted mozzarella.  Also, I only used three eggs instead of the four.  I sliced my eggplant thinner than the recommended 1/2″, but next time I will follow the recipe.  Since the eggplant was fried, I didn’t taste it much!
