Red Wine Sangria July 15, 2012

One of my greatest pleasures is enjoying an ice cold glass of sangria!  I especially love red wine based sangria, so I had to make Sangria! Sangria! from allrecipes.com (one of my favorite websites).  I had the chance to make a batch for my family last night.  It was a hit and it was gone in no time!  I don’t like using a good bottle of wine in my Sangria, so I opt for a less expensive bottle.  In this recipe, I used Barefoot Pinot Noir.  I will be making this again in the next few days, it was that good!  One thing to note about the recipe, is that it suggests that you let it sit overnight.  I let mine sit for about 5 hours.

Time:  15 minutes prep, and hours of waiting

Substitutions:  I added Ginger Ale just before serving instead of carbonated water.


Lemon Butter Salmon June 10, 2012

I’ve been trying really hard to like fish.  This is my second attempt at eating salmon.  I was able to eat the entire filet the last time I made it, so I thought I’d try again.  My husband will not eat it, so it’s just me!  I saw this recipe on Pinterest, of course.  It looked simple and tasty, so I gave it a try.  After 25 minutes, I took it out of the oven and it was totally raw.  Boo!  The rest of the family was ready to eat their grilled burgers and dogs (yum), so I threw it in a pan and pan fried it for 4 minutes per side.  I put some lemon-pepper seasoning on each side before frying.  It was really tasty!  I ate it all up and am willing to try it again!



Pinterest Recipe:  Tin foil, lemon, salmon, butter S – Wrap it up tightly and bake for 25 minutes at 300 °.  DO NOT USE THIS RECIPE.  YOUR SALMON WILL BE RAW!!!

My Recipe:  Place salmon in a lemon juice marinate for at least 30 minutes.  Cover filet in lemon-pepper seasoning.  Pan fry fillet in a couple tablespoons of butter for 3-4 minutes per side.

Boston Cream Cupcakes – Yum! June 2, 2012

These were the best thing I’ve made in a long long long time.  I almost ate all of them myself.  Now that I’m admitting to that, I realize that I should probably not make these again for a very very very long time.  You should make these yourself and find out how delicious and easy they are!



1.)  Prepare yellow cupcakes according to box.

2.) Prepare filling.

3.)  Once cupcakes are cool, use 1/4 teaspoon to scoop out enough of the inside to fill the cupcakes.



4.)  Scoop filling into a ziploc bag or pastry bag and fill cupcakes.

5.)  Smooth the filling on the top of the cupcakes.


6.)  Prepare chocolate ganache.

7.)  Spoon ganache over cupcake and use the backside of the spoon to create a nice smooth topping.


8.)  Refrigerate and enjoy!

Substitutions:  The original recipe says to cut the cupcake in half.  I was worried the cupcakes would slide around, so I opted to use 1/4 teaspoon to scoop out the insides of the cupcake and then fill.

Twiced Baked Potatoes March 12, 2012

I always order twice baked potatoes at nice restaurants, but have never made them myself.  The caption on the pin attracted me to this recipe.  The caption reads “only 88 calories..”!  I recalculated the calories after I made the recipe, and I came up with 225 calories.  Maybe it was the cheese I used?  The recipe took 1 hour 45 minutes total; however, only 25 minutes of that time is hands on!  These turned out great.  I will be making them again.  Next time I might make a few extra potatoes, because I didn’t have enough filling to stuff the potatoes as much as I’d like to.  I should also mention that the picture on the pin shows a whole potato stuffed, but the recipe tells you to cut them in half, which is what I did!  I ate mine like a potato skin!


Time:  10 minute potato prep / 1 hour baking / 15 minute filling prep / 20 minutes more baking = total of 1 hour 45 minutes!

Substitutions:  My husband is not a fan of mustard, so I eliminated the mustard.  Also, I forgot to sprinkle the paprika.  After 17 minutes of baking, the cheese wasn’t crispy on top, so I turned on the broiler for the last 3 minutes and that did the trick!
