Apple Cream Cheese Bundt Cake with Caramel Pecan Frosting November 5, 2012

This was probably the BEST cake I’ve ever made.  I will make this again and again and again.  Growing up, my mom made spice cake often.  It was a family favorite.  Well, this cake reminded me of souped up spice cake!  Don’t skip the pecan topping, it really made the cake!  This would be the perfect dessert for Thanksgiving.  It was great with a cup of coffee for breakfast, too!  🙂

Time:  It took half the day to complete this cake.  As far as prep work, dicing up the apples was the most time-consuming part.  Other than that, the baking and cooling times were long, too.  It was worth it though!

Substitutions:  I baked mine for one hour.  The recipe says to let the cake cool for 15 minutes and then remove the cake from the pan.  I had to wait much longer (an hour) and I still ended up losing some of the cake.  Ugh!  Also, the recipe shows a thick white icing on top of the cake.  The icing actually attracted me to the recipe; however, my icing was more of a glaze.  It didn’t matter because it was so delicious!!!


Batter poured into pan. The white you see around the edge, is the “Bake Easy” spray I used to coat the pan.

I added the cream cheese mixture. As you can see, I couldn’t keep it an inch away from the sides as instructed in the recipe.

I added the remaining apple batter.


Finished cake!

Jalapeno Popper Inspired Grilled Cheese June 13, 2012

I do love jalapeno poppers, so this Pinterest recipe caught my eye.  I knew my husband would love it, too!  I’m a wuss when it comes to spice, so I was a bit nervous about the jalapenos, but the peppers turned out just right with just a little spice!  I cooked the sandwiches in the bacon grease and they were nice and crisp and tasty.  The apricot preserves added a pleasant sweet taste to the sandwich.  I will be making these again!

Substitutions:  I didn’t have goat cheese, so I spread a semi-thick layer of cream cheese and them sprinkled some mozzarella cheese on top in lieu of the goat cheese.

Scooter’s Spaghetti January 10, 2012

This is the second time I’ve made this recipe.  My family loves it!  I love everything about it .. spaghetti, ground beef, cream cheese, and fried onions!!!  The recipe makes enough for multiple meals!


Time:  It took me 45 minute prep time and 30 minutes to bake.

Substitutions:  I left out the chopped green peppers and added more onion (used one small onion).  I used 10 oz. of spaghetti instead of 8 oz.  The recipe doesn’t specify an amount of Parmesan.  I used 1/4 cup.

Blueberry French Toast Sandwich January 7, 2012

I saw this recipe and it looked delicious so I gave it a try!  I was perplexed; however, I didn’t know whether I should make it for breakfast or lunch.  I opted for a weekend lunch.  It turned out fabulous!  I loved it and I think it’s perfect for either breakfast or lunch.  I did modify the recipe slightly.  I didn’t have any brandy, so I excluded it.  I didn’t use all the cream cheese mixture.  I thought I’d end up with cream cheese overload if I used it all.  Also, I ended up having tons of extra batter.  I probably could have made 4 more sandwiches.
