These cupcakes were delicious. I love ice cream cake so I couldn’t resist this recipe! It really was a very easy recipe and very versatile. You could change out any flavor cake or ice cream to dream up your most desired treat. I may try the mint chocolate chip variety next time. On my first batch, the cake filled my cupcake liners. I put in too much batter! 1 Tablespoon is plenty. I used whipping cream and sugar to whip up my own whipped cream. I froze the entire cupcake (cake, ice cream, and whipped cream). Enjoy!
