Cake Batter Pancakes June 30, 2012

I’ve been wanting to try out this recipe for a long time, but I never seemed to have cake mix on hand.  Well, I’m making cake batter rice krispie treats tomorrow (stay tuned), so I happened to have a box of yellow cake, so today is the day!

 

 

The girls really enjoyed these pancakes. My 22 month old pretty much just licked off the glaze.  My 4-year-old opted for syrup.  I have to say that I thought these were amazing; however, for breakfast, the glaze made them too sweet for breakfast.  I think these cake batter pancakes are great for a special occasion, but not for a routine breakfast.  We will make them again, possibly for my daughter’s birthday.  Also, these would be an awesome dessert.  I’m thinking warm pancakes, with vanilla ice cream on top with the whipped cream and cherry on top!

Here are a few notes about the recipe.  The recipe says it makes 12 pancakes and I came close with 14.  I used 1 cup of milk (the recipe calls for 1-2 cups) and I thought my pancakes were to thick; however, 1 cup was probably right for the recipe since I yielded close to 12 pancakes.  Next time, I will add more milk to get a thinner pancake.  My glaze turned out way to thick.  I added more milk until the consistency was just right.

This recipe has inspired me to try other new pancake recipes.  Maybe I’ll try another next week!

Time:  30 minutes

Substitutions:  I added some whipped cream and a cherry on top!  Also, my glaze came out too thick, so I added more and more milk until it was just right!

Cake Batter Ice Cream Cupcakes June 2, 2012

These cupcakes were delicious.  I love ice cream cake so I couldn’t resist this recipe!  It really was a very easy recipe and very versatile.  You could change out any flavor cake or ice cream to dream up your most desired treat.  I may try the mint chocolate chip variety next time.   On my first batch, the cake filled my cupcake liners.  I put in too much batter!  1 Tablespoon is plenty.  I used whipping cream and sugar to whip up my own whipped cream.  I froze the entire cupcake (cake, ice cream, and whipped cream).  Enjoy!

Cake Batter Truffles – Yummy! May 5, 2012

I’ve had this recipe pinned for a long time, and decided to finally make them for a friend.  These were easy to make and delicious!  My daughter was able to help by adding sprinkles!  This is a great recipe!

Substitutions:  I put in too much milk.  The dough wasn’t stiff enough to roll, so I added just a bit more flour.  Also, I did not add any cake mix to the white candy melts.

Time:  1 hour

 

These were awesome.  One thing I love to do with truffles is freeze them.  They make a great snack in the middle of the day when you a little somethin’ but don’t want to eat an entire pan of brownies!

Snickers Popcorn! Yum! April 7, 2012

I saw a pin for Snickers popcorn.  Snickers are my favorite candy bar and who doesn’t love popcorn?!?  This recipe turned out awesome!  This really is a treat!

 

Tips:

(1)  I would recommend making it the day before you want to eat it.  If you serve this right after it’s done, the chocolate from the Snickers and melted semi-sweet chocolate gets all over your hands.  Also, the caramel mixture is sticky on your teeth.  I found that the next day, the recipe was much less messy and didn’t stick to my teeth as much!

(2) The recipe makes a ton of popcorn!  Half the recipe if it’s just for the family.

(3) This could be a good holiday gift idea for neighbors, teachers, etc.

Substitutions:  I used 3 bags of  microwave bagged popcorn instead of air popped!

Time:  5 minutes to pull out ingredients + 10 minutes to chop Snickers + 10 minutes to prepare caramel / pop popcorn + 5 minutes prep time + 1 hour 15 minutes bake time = 1 hour 40 minutes!

 

 

Easter Peeps S’mores March 26, 2012

One of my family’s favorite pastimes is sitting by the fire in our backyard fire pit.  Part of our fire ritual is making s’mores.  I saw a pin that used Peeps instead of marshmallows in the s’more.  Brilliant!  I knew my girls would love this idea.  I’m not a peep fan, myself, so I was a bit skeptical.  It turns out that they were really good cooked up and the s’more tasted just the same.  I have a Tupperware full of s’more ingredients on hand at all times since we make them a lot, especially in the summer.  The only ingredient I was missing was the peeps, so I picked some blue bunny Peeps up at the store.

 

The entire family loved this activity.  My 4-year-old enjoyed roasting the Peep (and eating them).  My 19 month old got a taste of her first Peep and she came back for seconds.  My husband (not a big sweet person) loved it, too!  Overall, I’d say these were a hit, and easy too.

Chocolate Chip Cookie Skillet … A Favorite in My House March 20, 2012

Ever since tasting the chocolate chip pizza at Lou Malnati’s Pizzeria, I have loved loved loved what my family calls “cookie treats.”  A “cookie treat” is basically a chocolate chip cookie baked until it’s almost done, tossed in a bowl, and covered with a scoop of vanilla ice cream.  I saw this chocolate skillet cookie pin and wanted to try it!

 

I followed the recipe exactly, baking for 15 minutes.  I even have the same 8″ cast iron skillet used in the recipe!  It was sooo very good.  It was very very chocolaty, so be ready to chug some milk!  I love that there was hardly any cleanup since everything was mixed directly in the skillet!

St. Patrick’s Day Rainbow Twizzlers and Rolo’s Treat March 18, 2012

My daughter’s eyes lit up when she saw the Rainbow Twizzler’s I purchased.  I showed her a picture of the project we were going to make and she was thrilled.

 

To complete this project, I used Rainbow Twizzler Twists, Rolo’s, and sandwich baggies.  I had my four year old and her neighbor friend help me place the rainbows.  They had to find all the colors to make a rainbow and then lay out the rainbows on our kitchen table.  Then, they counted out Rolo’s for me.  This turned out to be a great lesson for my preschooler (matching colors and counting).  I placed the Rolo’s and Twizzlers in the baggies.

 

The kids handed out the treats to some of the neighbor friends.  These treats were a hit.  If I’d had more time, I would have created a cute “Happy St. Patrick’s Day” label to attach.  Maybe next year …
