I made these Crockpot Chicken Fajitas for guests. I was a bit nervous since I’d never made it before, but I love cooking in the crockpot when I have company so I don’t have to spent much time cooking and cleaning. The recipe was easy to make and the chicken was very tender. I thought the peppers and onions were too tender for my liking. I prefer the traditional pan-fried chicken fajitas over the crockpot version, but this is a good alternative.
Time: 15 minutes to chop all the veggies and chicken. The recipe cooked in the crockpot on high for 4 hours.
Substitutions: I used bottled lime juice, not fresh.
